What are Ancient Grains?

The grains used in our products are the result of 30 years of research into 2000 varieties of soft wheat from all over the world by Prof. Salvatore Ceccarelli, Dr. Stefania Grando and their colleagues.

Originally established in Aleppo, Syria in 2009, it was then introduced into Italy in 2010 where centuries of rich traditions surrounding food were used to create what is now available to you!

The evolutionary process that allows this wheat to thrive ensures the grain can adapt in many different climatic and geographical factors. It resists diseases, insects and weeds more effectively than other uniform grain varieties, which allows it to be grown without the use of herbicides, pesticides, fertilisers or GMO's (Genetically Modified Organisms)!

This simplifies not only the the work of the farmers, but also the work of your digestive system, while respecting the environment and biodiversity all at the same time.

The grains, once cultivated, are then stone ground and checked at both chemical and biological levels. Finally, these grains are used to create artisanal products with unique aromas and flavours, allowing you to enjoy the taste of Old Italy right from your own kitchen!
